Bourbon Pecan Pie

Before I met Bruce, I had never tasted bourbon pecan pie. As a matter of fact, I had never had pecan pie at all. In light of Bruce growing up in Kentucky, ya know bourbon would come into play! Ordinarily I am not a huge bourbon fan, but there is something magical about bourbon and pecans in this golden mixture of goodness!

Bourbon Pecan Pie

Ingredients

Ingredients for bourbon pecan pie filling:

  • 3 eggs
  • 1 cup sugar
  • ½ cup light corn syrup
  • ½ cup dark corn syrup
  • 5 tbls butter melted and cooled
  • 3 tbls bourbon
  • 1 ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 ¾ cups pecan halves
  • 1 9 inch unbaked pie crust

Instructions

Instructions for making bourbon pecan pie:

  • Preheat oven to 375 degrees.
  • Beat eggs until smooth. Add in sugar, both corn syrups, butter, bourbon, vanilla and salt. Mix until combined.
  • Prick the sides and bottom of the pie shell with a fork. Spread the pecan halves into the bottom of the pie crust and pour mixture over the top of the pecans. Bake for 60-70 minutes until edges are set and middle is slightly loose. The middle will continue to set as it cools. Move to wire rack and cool completely.
