Beer Cheese Dip

We mixed it up a bit on this beer cheese dip by using a variety of sharp cheeses. Basically, open the cheese drawer in your fridge and see what ya got. Smoked gouda? Yeah, that sounds tasty! Vermont cheddar? Oh yeah that will be so good! Same for the beer.
