This is comfort food at its best. And just so easy to make. Sweet potato barley soup is a hearty blend of canned, frozen and fresh vegetables.
You can use whatever you have in your pantry, fridge and freezer. We always start with a base of onions, garlic sautéed up, and then we just start to add in what we have on hand! That could be sweet potatoes, frozen veggies, canned beans, canned tomatoes, and broth. We always use Better than Bouillon base. Add in coconut milk, or cream or leave it as a broth base. Lentils, barley, rice, and pasta are favorite additions to complete the meal.
