This makes a very big batch so start with a large bowl, and add the 3 boxes of Chex cereal. I like to use a metal mixing bowl, but any bowl will work. Set aside.
Add the chocolate chips, peanut butter and butter into a large microwavable bowl. I like to use an 8 cup Pyrex bowl with a handle and a spout. It is easy to handle, and pour from. Place bowl in microwave on half power for 4 minutes. Remove, and stir until smooth. If there are still a few lumps, return to microwave on half power for 1 minute.
Now it is time to stir in the vanilla. Since the vanilla is a liquid, the chocolate will slightly thicken. At this point, if it gets a little thick, add a few tablespoons of butter, and stir, and heat a bit more if needed.
Pour the melted mixture over the cereal, and moving gently, but quickly, using 2 spatulas, stir the cereal and chocolate mixture together. Be sure to fold the cereal underneath over the top to get it all coated. As the mixture cools, you may want to just put on rubber gloves and mix to ensure it is thoroughly coated.
Before the mixture cools, add the powder sugar and cocoa powder over the top, and again, using your hands, mix and toss this in the bowl.
You can store this mixture in any type of sealed container. I like to measure 2 cups into small sealable plastic bags. To do this I use a wide mouth mason jar funnel, and a bag that sits in a mug. It is so easy!
This will make 16 2 cup bags, plus some leftovers for you to snack on! A great snack idea for school or work parties! All individually sealed! And you can add the bag to a cute holiday mug for a gift!
